The FDA does not specify exact lighting levels for all food facilities but requires that lighting must be adequate to ensure proper food preparation, inspection, and cleaning. Typically, the FDA Food Code recommends at least 108 lux (10 foot-candles) in walk-in refrigeration, 215 lux (20 foot-candles) in food preparation areas, and 540 lux (50 foot-candles) where detailed work is done. Additionally, light bulbs must be shielded to prevent contamination.
